Had some questions about the fudge babies, so I thought I'd leave you all with some tips:
ReplyDeletemake sure your dates are pitted.
to peel or not to peel? - it's up to you, but if you are going to peel them, I suggest peeling them under running water, as they are quite sticky!
My walnuts were chopped before I added all the other ingredients.
processing in the food processor does NOT take very long. I think I processed them on pulse for like a minute...basically until everything clumped together and looked like a giant block of fudge.
Thanks Jen! I made these over the weekend and added shredded coconut (unsweetened) to the recipe. Also topped some with Almond Butter. They were delicious.
ReplyDeleteThose are good tips. Not sure what happened when I tried them but they didn't seem moist enough and rolling them into balls didn't work so well. I think I need better ingredients. Organic honey might be a good option too.
ReplyDeleteAlso, are there any other dried fruits that could work in this recipe?
I did not peel ours. We used whole walnuts...and yeah Melanie, I thought they didn't seem sticky enough, but once you roll them around a little they start to get sticky.
ReplyDeleteJZ- nice twist on them, would they be called Almond butter coconut fudge babies?
We should come up with a whole line of Fudge Babies, the CFKoP signature treat....
Love the idea!...Do I smell Fudge Baby Party!?
ReplyDeletePeeled - I did roll them around a good bit
Unpeeled - I dipped my fingers into some olive oil and put it on my palm to reduce the sticky factor and help them ball together
Haaaaappy birthday Nicole!!!
ReplyDeleteThanks Chris!!!
ReplyDeleteHannah & Laura - thanks for the push today. I hate those days when your heads not in the game...today was one of them...so I needed it :)
ReplyDeleteHannah & Laura - you girls did awesome! Snatchy snatches are not an easy thing!
