i was craving eggplant today and came across this recipe which might be good for superbowl snacks on sunday!

Ingredients:
1 large sized eggplant
1 cup shredded mozzarella
1 can tomato sauce or store-bought marinara sauce
1 tsp basil
1 tsp oregano
Slice the eggplant lengthwise, making probably 6-8 slices about ½ inch thick. Place on a greased cookie sheet and place under a broiler. Broil until light brown. Remove, flip and cover with tomato sauce, basil, oregano and mozzarella cheese. Place back under the broiler. Feel free to add more toppings here.

ReplyDeleteAnyone have any thoughts about mecury content in fish oil? Obviously they don't list potential mecury content on the label just as its not listed on a can of tuna. Just wondering what people who have been taking fish oil for awhile think about that.

ReplyDelete1. mercury content is more of a concern from big fish i.e. fish that can grow large enough to even have enough mercury in their bodies to be a danger...most fish oil comes from small fish like cod and sardines
2. mercury has an affinity for the meat of fish, not the oil.
3. There have been a bunch of independent studies on mercury in fish oil and basically the fish oil that is out there has very little to none (think parts per billion) Here's an article from New York Times: http://www.nytimes.com/2009/03/24/health/24real.html
4. if you are eating real fish (fillets, etc) go for the wild, not farmed
So, basically the benefits of fish oil far outweigh the potential mercury contamination. Reduced inflammation, better omega 3 to omega 6 ratios, and better blood flow.
Hannah, if you wanted to "bread" your eggplant, throw some almonds in a blender for a few seconds and with some egg whites it'll stick to the eggplant.
