Kristin and I just ma...11 lbs??? sweet life Mike! <br /><br />Kristin and I just made pumpkin walnut muffins. Easy recipe, tastes good! (probably not zone, but pretty clean)<br /><br />For 12 pumpkin muffins, mix: <br />Six eggs, 1/2 cup pumpkin, 1/2 cup coconut flour, 4 tbsp. coconut oil (we did 2 tbsp. olive oil and 2 tbsp. butter b/c no coconut oil) 2 tbsp. honey, 2 tbsp. agave, (you can do 4-6 tbsp. of agave instead of honey) 1/2 tsp. baking powder, 1 tsp. vanilla, 1 Tbsp. cinnamon, 1 tsp. nutmeg, 1 cup walnuts (optional)<br /><br />Pour into muffin pan with 3 Tbsp. of mix in each cup. bake at 400 for 15-17 minutes. <br /><br />The only thing we would change is adding pumpkin spice to get a little more pumpkin flavor.
